Iron Chef

Iron Chef is my favorite TV show and I’ve been having little contests with myself to see if I can create meals on the fly. My husband has gone to the store and bought a “secret ingredient”. Then I have 1 hour to make several dishes using that secret ingredient. Afterwards, we judge the taste, originality, and plating in an excel spreadsheet I have created. Today’s secret ingredient was bay scallops. Here were the items I created:

Blackened scallop and orange salad
Spicy scallop and pimento spread
White wine and garlic scallop topped pasta
Parmesan encrusted basil scallop bake
Ricotta, orange, and scallop mini pie

So if you’re wondering – yes I did make a dessert out of scallops. Since I created these “on the fly” I don’t have recipes for them, but I can give you an idea of what I put in the mini pie (it was actually quite good!). I boiled about 10 scallops for 7 minutes then drained them. Once cooled, I pureed them in my food processor until smooth. Then I added around half a cup of ricotta cheese, about 2 tablespoons of sugar, and 1 tsp of orange peel. Then I pureed this until smooth. Next I created a pie crust with about 1 cup of flour, a dash of salt and 1/3 cup of shortening. I mixed this until coarse crumbs were created then added about 4 tablespoons of water. I needed it, then rolled it out into a circle. I spooned the ricotta, scallop mixture inside then rolled it up. Next I brushed it with water and sprinkled sugar on top. I baked this for 15 minutes then drizzled chocolate and blackberries on it.
